Ingredients

1.5 cups - WHEAT FLOUR, WHITE, ALL-PURPOSE
1/8 tsp - SALT, TABLE
4 oz - SOY FLOUR
1 egg
1/3 cup - SUGAR, GRANULATED
1/2 cup - SOY MILK, FLUID
1/2 cup - WATER
1 tbsp - BAKING POWDER, DOUBLE ACTING
1 tbsp - SOYBEAN OIL, salad or cooking
1 tsp - CINNAMON, GROUND
1/2 cup - PINEAPPLE, JUICE PACK, CANNED, solids/liquids, crushed, sliced or chunks
1/2 cup - APRICOT, DRIED, sulfured, uncooked, halves
1/4 tsp - NUTMEG, GROUND

Directions

Combine flours, sugar, baking powder, spices and salt; mix well. Make a well in the center and add egg, soy milk, water, oil, pineapple and apricots; mix only until moistened. Spoon mixture into oiled muffin tins. Bake at 400°F, 12 to 15 minutes or until wooden pick inserted near center comes out clean.
Makes 1 dozen
