Beef Fried Rice

Ingredients

2 tbsp - SOY SAUCE
1/2 tsp - SUGAR, GRANULATED
1 tbsp - VEGETABLE CORN OIL, salad or cooking
2 large - EGG, RAW
8 oz - BEEF, GROUND LEAN, RAW, 21% FAT (HAMBURGER)
1 medium - CARROT, RAW
1 medium stalk - CELERY, RAW, 7.5'' - 8'' long
1 large - ONION, RAW, spring or scallions (includes tops & bulb)
1 tsp - GINGER ROOT, RAW
1 clove - GARLIC, RAW
2 cups - WHITE RICE, LONG GRAIN, COOKED

Directions

Beat eggs well. Chop carrot, celery and scallion. Mince garlic and ginger. Have rice cooked and chilled.

Combine soy sauce, sugar and salt and pepper to taste in a small bowl and set aside. Heat oil in a heavy nonstick skillet over medium high heat. Cook eggs about 45 seconds, stirring constantly, until eggs are just set. Transfer eggs to a bowl and set aside.

Add ground beef, carrot, celery and onion to same pan over medium heat. Sauté about 3 minutes, stirring often to break up meat, until browned. Stir in ginger and garlic and cook 1 minute. Discard excess fat.

Increase heat to high and add rice. Stir-fry about 1 minute, until heated through. Stir in soy sauce mixture and eggs and stir-fry 30 seconds longer.
