Ingredients

1 oz - PENNE RIGATI PASTA
1 cup - EGGPLANT, BOILED (1'' cubes)
1 cup - MUSHROOM, BOILED
1 cup - RED PEPPER, SWEET, BOILED W/SALT, chopped, drained
2 tbsp - BASIL, FRESH
2 tsp - GARLIC, RAW
2 tbsp - PARMESAN CHEESE, GRATED, grated
2 tsp - OLIVE OIL, salad or cooking

Directions

Toss 1/2 cup cooked penne with grilled eggplant, red bell pepper and mushrooms 1 teaspoon sauteed garlic, chopped basil, 1 tablespoon olive oil and 1 tablespoon Parmesan cheese for one.

I have doubled the ingredients to serve two.
