Ingredients

2 smalls - ORANGE, ALL VARIETIES, RAW (2-3/8'' dia)
1/2 cup - HONEY
2 cups - WHEAT FLOUR, ALL-PURPOSE
1/2 cup - CORNMEAL, self-rising
1 tbsp - BAKING POWDER, LOW SALT
1 tsp - SALT
1/2 cup - SUGAR, BROWN, unpacked
4 eggwhite (large)
1 cup - BUTTERMILK, CULTURED, LOWFAT
1/2 cup - BANANA, RAW, mashed

Directions

Preheat oven to 400 degrees. Spray muffin tin with nonstick cooking spray. Cut oranges into 6 slices each and remove seeds. Place a teaspoon of honey into each muffin cup; top with an orange slice and set aside. Mix flour, cornmeal, baking powder and salt in a medium bowl and set aside. In another bowl, combine sugar, egg whites, buttermilk, banana and mix well. Fold mixture into the dry ingredients and mix until just combined. Spoon batter into cups about 3/4 full. Bake 15-20 minutes, until golden. Makes about one dozen muffins.
