Mozzarella Stuffed Peppers

Ingredients

1 medium - ONION, RAW, 2.5'' dia
2 cloves - GARLIC, RAW
1 tbsp - SOYBEAN OIL, salad or cooking
1 cup - BROWN RICE, LONG GRAIN, COOKED, prep w/o salt, butter
8 oz - TOMATO SAUCE
2 oz - WALNUT, halves & pieces, 1 bag
4 mediums - BELL PEPPER, fresh
9 1/2s - BROTH, VEGETABLE, RTS, rts
6 oz - TOFU
MOZZARELLA, LOW-FAT

Directions

Saute the chopped onion and minced garlic in the oil until tender .Crumble Tofu. Mix all ingredients except the peppers. Cut off the top of the peppers and remove seeds. Stuff each pepper with the mixture. Place peppers in a baking pan and pour 2 cups vegetable broth around the base of the peppers. Cover and bake at 350°F for 30 minutes.
