Ingredients

8 oz - SPAGHETTI PASTA, DRY
2 tsp - OLIVE OIL, salad or cooking
2 cloves - GARLIC, RAW
1 medium - ONION, RAW, 2.5'' dia
1 lb - CHICKEN BREAST, RAW, broilers or fryers, meat only
3 tbsp - MUSTARD,DIJON
2 tbsp - HONEY, STRAINED OR EXTRACTED
1/2 cup - BROTH, CHICKEN, CONDENSED
1 tbsp - PARMESAN CHEESE, GRATED
1 pkg yield - MIXED VEGETABLES, BOILED, NO SALT, frozen, drained (10 oz pkg)

Directions

Crush garlic cloves. Slice onion. Cut chicken into bite-sized pieces.

Cook pasta according to package directions, drain and set aside.

Heat olive oil in a non-stick pan on medium high heat and add garlic, onion and chicken. Cook until chicken browns and is cooked through, about 10-12 minutes. Remove chicken from pan and set aside.

Add mustard and honey to pan; gradually stir in broth and bring mixture to a simmer. Add frozen vegetables to pan, cover, and cook about 6 minutes, until vegetables are warmed. Add cooked chicken, and salt and pepper to taste.

Serve chicken and vegetables over pasta. Garnish with grated parmesan cheese.
