Apple Pork Chops

1-1/4 tsp - VEGETABLE CORN OIL, salad or cooking
4 chops - PORK CENTER LOIN, RAW, fresh, chop/roast, bone-in
1-1/3 cup - APPLE JUICE, UNSWEETENED, canned or bottled
3-1/2 tbsp - MUSTARD, GROUND
2 medium - APPLES, RAW, 3 per lb. (2.75'' dia)
1/3 cup - ONION, RAW, spring or scallions chopped
1-1/3 tbsp - CORNSTARCH
2-2/3 tbsp - WATER


Core and slice apples 1/2 inch thick. Slice green onion.

Heat oil in a heavy nonstick skillet over medium high heat. Cook pork chops 2 minutes per side until browned. Season with salt and pepper to taste. Combine apple juice and mustard in a bowl and pour over pork chops. Reduce heat to low, cover and simmer 45 minutes.

Add apples, raisins and onions. Cover and simmer another 5-10 minutes. Transfer pork chops and apples to a serving platter and keep warm.

Combine cornstarch and water in a jar with a tight fitting lid. Shake well and gradually stir into apple juice liquid. Cook and stir until thickened. Serve sauce over pork chops and apples.
