Orange Glazed Pork Chops

Ingredients

4 cloves - GARLIC, RAW
2/3 cup - MARMALADE, ORANGE
1/2 tsp - PEPPER, BLACK, GROUND
2 tbsp - PEPPERMINT LEAF, FRESH
1 lb - PORK CENTER LOIN, RAW, bone-in
1/4 cup - SOY SAUCE, SHOYU, LOW SALT

Directions

1) Preheat your barbecue grill or broiler.
2) Butterfly the pork chops by cutting a lengthwise slit about two-thirds of the way through each tenderloin (don't cut all the way through).
3) Place the chops between 2 sheets of plastic wrap and flatten them somewhat with a tenderizing mallet.
4) Sprinkle the chops with pepper.
5) Mince the garlic and combine the orange marmalade,peppermint, and light soy sauce in a small saucepan.
6) Brush part of this marmalade mixture over the pork chops.
7) Grill the pork chops about 8 minutes per side, basting frequently with marmalade mixture.
8) Heat the remaining marmalade mixture over medium heat about 1 minute, stirring constantly until warm.
9) Serve the pork chops with the orange marmalade mixture.
