Low-Fat Hollandaise Sauce

Ingredients

4 tbsp - Butter Buds, Liquid, Make by combining one 1/2 oz. pkt. with hot water. Refrigerate in sealed container.
1/4 cup - MILK, NONFAT, DRY (SKIM)
1/4 cup - EGG SUBSTITUTE, LIQUID
2 tsp - LEMON JUICE, RAW
1/2 tsp - MUSTARD POWDER, fresh ground, edible portion
1 tsp - SUGAR, GRANULATED
1 tbsp - VINEGAR, WHITE
1 1/2 oz - WATER

Directions

1) In a small bowl, mix the dry Butter Buds, dry milk, and 1 oz (2 tbsp) of hot water.
2) In a separate bowl, combine the egg substitute, mustard, sugar, and vinegar.
3) Beat slowly as you add the liquid Butter Buds and the contents of the first bowl.
4) Stir in 2 oz. (4 tbsp) of hot water and the lemon juice.

Note: To make liquid Butter Buds, mix one packet (1/2 oz. - 8 level tsps) with 1/2 cup of water (4 fl. oz.) Mix vigorously. Store in refrigerator in a tightly covered container.
