Chicken Salad Pita Sandwich

Ingredients

1/4 cup - CELERY, RAW, diced
12 oz - CHICKEN BREAST, STEWED, broilers or fryers, meat only
1 tsp - LEMON PEPPER SEASONING, NO SALT
1 tbsp - MUSTARD, PREPARED, YELLOW
1 tbsp - ONION, RAW, chopped
1/4 cup - PICKLE RELISH, SWEET
4 pitas - PITA BREAD, WHOLE WHEAT, small pita (4'' dia)
1 cup - SALAD DRESSING, 1000 ISLAND, NONFAT, Thousand Island ''Free''
8 oz - WATER CHESTNUT, CHINESE, RAW
8 oz - YOGURT, SKIM MILK, PLAIN, 13 grams protein per 8 ounce

Directions

1) Boil the chicken until done. Chop into cubes. Sprinkle with lemon pepper seasoning.
2) Drain the water from the water chestnuts. Chop the onion, celery, and water chestnuts. Combine all the ingredients (except for the pita pocket bread) in a medium bowl.
3) Chill this chicken mixture for about 30 minutes.
4) Microwave the pitas until they are warm, then cut the pita breads in half. Stuff the chicken mixture into each of the pitas. Serve.
