Scrambled Egg with Ham on Toasted English Muffins

Ingredients

.33 grams - CANOLA OIL SPRAY
1 cup - EGG SUBSTITUTE, LIQUID
1/4 cup - HAM LUNCH MEAT, 5% FAT, sliced, extra lean, diced
1/4 cup - MUSHROOM, RAW
1/4 cup - ONION, RAW, chopped
8 tbsp - SALSA
2 muffins - ENGLISH MUFFIN, MIXED-GRAIN, includes granola

Directions

1) Chop up the ham, fresh mushrooms, and onion. Saute these items in a nonstick saucepan coated with vegetable oil spray.
2) Mix with a carton of egg alternative (like Egg Beaters).
3) Scramble together in four round piles (each roughly the width of an English Muffin).
4)Toast the muffins. Place one of the scrambled egg piles on top of each English Muffin half.
5) Serve open faced with a tablespoon of salsa over each serving.
